Cutlets made with leftover cooked rice; because why waste it or make the usual fried/masala rice with it when you can make something different! I’ve also made these with leftover biryani. Yep!! It’s easier, because no spices, just mashed potato and egg to be mixed and smashed in with the rice (the masala of the biryani is enough to give it flavour).

Plate with leftover rice cutlets with a bowl of tomato sauce

Ingredients:
1 cup cooked rice
1 medium to large potato (boiled, peeled and mashed)
1 medium-sized onion (finely chopped)
1 green chilli (chopped)
Handful of chopped coriander leaves
1 pinch turmeric powder
1 pinch red chilli powder
½ tsp. cumin powder
½ tsp. coriander powder
¼ to ½ tsp. garam masala
1 egg
Breadcrumbs as required
Salt as required
Oil for shallow frying (if not air frying)

Method:
Mix all the ingredients together. The rice will also get mashed while you mix.
Shape the mixture into small to medium-sized cutlets.
Dip into the beaten egg and then breadcrumbs and shallow fry.

A different style of bhel to try, using makhana to make it a healthy snack.

After College Sukha Bhel

Ingredients
2 cups makhana
1 finely-chopped onion
½ finely-chopped tomato
¼ cup boiled sweet corn
A handful of pomegranate and peanuts.

Method
Roast the makhana. To that add the onion, tomato, boiled sweet corn, pomegranate and peanuts. 
For the chutney, no need to stress about making tamarind/green chutney.
Use sweet chilli sauce and a big squeeze of lime, and you will have a healthy and very enjoyable snack ready in no time at all!

Cream Crackers with cheese, mayonnaise and grapes on them

Ingredients
12 Cream Cracker biscuits
12 slices of cucumber
12 cheese slices
6 tbsps mayonnaise
A handful of purple grapes
A sprinkling of salt
A sprinkling of pepper.

Method
Take a large serving plate and place the biscuits horizontally on it.
Arrange the slices of cucumber over them.
Top the cucumber slices with the cheese slices.
Put blobs of mayonnaise over the cheese.
Top with the purple grapes. Lightly sprinkle salt and pepper over them and serve immediately.

Chocolatey samosas

Potatoes and spices bring heaven down to earth in the form of samosas. What if they were filled with chocolate, instead? From India comes this fascinating creation that marries chocolatey goodness with deep fried delight! There is obviously a huge demand for it — why else would there be chocolate samosa pav? A dessert samosa after a spicy samosa sounds good!
